“American Wagyu” is what we call Wagyu that are at least 50% Full Blood Japanese Wagyu crossed with other cattle, primarily Angus. The Angus has long been the steak of choice in the US and consumers have come to recognize its’ tastes and textures to the point that if it doesn’t taste like Angus…it’s not a steak. American ranchers developed a cross between the Angus and Wagyu that gives the consumer, you, the benefits of both!

Our American Black Wagyu / Angus Cross Whole Beef option is our best value for those who already are hooked on the rich flavor of Wagyu, but want an Angus kick! Our pasture raised and uniquely grain finished beef cross is the perfect blend for those who want the rich flavor and marbling of the Wagyu yet prefer the flavor and texture of Angus that most American’s are used too! All cuts are individually vacuum packed and ready for pickup at Butcher, the Farm, or we can arrange shipping in insulated packaging.

A Whole beef contains approximately 600-900 lbs hanging wt. and cut as follows: Upon receipt of your order, we will email you a butcher cut sheet for your selected butchering. Once we confirm your desired cut instructions, we will process your order. Final invoicing will occur when Butcher determines actual hanging weight of carcass assigned to your order

NOTES:

Cut lists from Butcher updated as of May 31, 2025.  Whole beef requires 16-20cf of freezer space.  Actual weight and sizes of cuts may vary based on size of animal.  Orders take 2-4 weeks to process once animal is sent to Butcher.  Save Butcher to Farm delivery cost ($50 per order) by picking up your order from the butcher when ready.  Email us at mossyrockwagyu@gmail.com to make arrangements for you to pick up your order from the Farm.
